Direct pressed, fermented and aged in 2 500L Stockinger Austrian puncheons. Went through 100% malolactic fermentation. Aged for 6 months in barrel and left unfiltered to build texture.
Shell Creek Vineyard has sandy top soil and calcareous fossilized sea shells underneath. It was planted in 1972, and owned by the same family (Sinton Family), since the late 1800’s. Non-certified organic, no use of chemicals in the vineyard.
All of our wines are made naturally, meaning no use of inoculated yeasts or bacteria. We use only native yeast to spark fermentation. We do not add any powdered tannins or enzymes. A minimal dose of S02 is added 4 weeks before bottling to some wines.
There must be a person 21 or older present at the time of delivery.
